Stefano Micocci, Executive Chef St. Regis Downtown
Initially trained as an expert in Biology and Food Technology, Chef Stefano started his career in his home country, working up the ranks across various five-star hotels in Italy. His first leadership position began in 2010 where he was appointed as the pre-opening Head Chef for Carlino in Lecce. In 2013 Chef Stefano joined the team at The Westin Dubai where he managed the daily kitchen operations of 28 chefs and oversaw the launch and success of Bussola Dubai. In 2014 he joined The Westin Abu Dhabi Golf Resort as Chef de Cuisine, then Le Meridien Abu Dhabi as Executive Sous Chef in 2016 and finally joined The Andaman Luxury Collection in Malaysia as Executive Chef in 2017 where he oversaw the entire culinary operation across 4 dining venues, 60 chefs and 21 stewarding staff.
With a personal expertise in various unusual culinary fields, including slow cooking techniques from Tuscany, a mastery in bakery from Gambero Rosso and specialty training in celiac and gluten-free cooking. Chef Stefano also brings past collaboration experiences with Michelin star chefs, working alongside Ron Blaauw and Oliver Glowig.
During his leisure time, Chef Stefano enjoys exploring nature and being active with outdoor activities including mountain biking and hiking. Not only is Chef Stefano passionate about music but he is also as a professional drummer and jazz player. When spending quality time with the family, Stefano loves to spoil them with a hearty braised beef and concludes his evenings with a classic vodka martini with a twist of lemon.
